Twice baked potatoes are one of those dishes that are such a luxurious comfort food that you often have to put the fork down before you stuff yourself.

  1. Preheat your oven to 425 degrees Fahrenheit.

  3. Check to see if the cheese is melted again and the edges are getting crispy. If not, allow them to cook for another 5 minutes.

  5. Continue this process in 30-second increments until heated through and the cheese is melting.

  1. Get a good steady burn going with your coals. If you have a temperature gauge, you’re aiming for 350 degrees.  
  2. On a grill with a cover, place your potatoes on indirect heat with the lid closed for about 20 minutes. Check to be sure they’re heated through. If not, you can cook for another 5 minutes.  
  3. On a grate, wrap your potatoes in a foil bag (you can make one out of tin foil) and place on the grate, away from the flame. Just like with the grill, cook for 20 minutes then check.

  1. Bring your twice baked potatoes to room temperature by allowing them to sit on the counter for about 20 to 30 minutes.  
  2. Place a cast iron skillet on the stove on medium heat.  
  3. Add olive oil to your pan. (Olive oil is less likely to burn but will still give you a crisp.) 
  4. When your oil starts to smoke in the pan, add your twice baked potatoes to the skillet and cover.  
  5. Allow to cook for about 5 minutes before checking them. The bottom skins will be nice and crispy and the heat trapped in the pan will have cooked your potatoes through.
